Elie Daviron, the chef at Festin Nu, decided to include insects on his menu when the FAO announced that this source of protein, more ecological than meat or fish, could save the planet. From now on, the burgers and smoked salmon share the menu with locusts, palm weevil larva, beetles and crickets… A Paris dining premiere!
Rule number 1: make it attractive and appetising! The chef achieves this through a combination of textures, flavours and colours… and the steely nerves of the customers! And to make sure that the tasting experience is not just an adventure but an enjoyable one as well, a lot of attention is paid to the artistic presentation. The tapas formula (small portions between 4 and 9 euros) is ideal for beginners…
