This area, nestled between the Marché du Bd Richard-Lenoir and Avenue Parmentier never ceases to reinvent itself. Lately, the wholesale outlets have been moving out, probably simply a matter of age, and taking with them their heavy semi-trailers, surrendering the streets to ecology and the ‘vélib’ generation of cyclists.
It’s here that Pierre Sang decided to invest his passion and ideas. A restaurant doesn’t have to be merely a space for relaxation and culinary delights, or by any means anonymous. On the contrary, he sees it as a vehicle for creating meaning and exchange. Just like at school, there are practical courses, technical demonstrations and of course, a recipe book. The interior design encourages interaction and curiosity, installing the chef and his team at the centre of the action, like in Japanese restaurants.
A local, socially integrated restaurant
Pierre Sang is an innovator, not just on the plate but also in engaging the participation of the other merchants on his street. The butcher, the fishmonger and the baker are not only his neighbours but suppliers. As for the customers, they come from every corner of Paris to see and sample the food that had them breathlessly captivated on TV.

Comfortable in working-class neighbourhoods and the tonier areas of Paris, I never get tired of rediscovering this timeless city. The Sex Pistols set the pace when I was younger. New technologies fill my working days now. My little extra: discovering fine eating spots around the capital for romantic dinners!
