Proef sees itself as a new restaurant concept, where you are invited to try things, which is what “proef” means, after all. But I adopted this restaurant before I’d even tried a mouthful.
Located in the middle of Westerpark, Proef is a little place with a garden running alongside, which becomes a terrace on days when the sun’s out. Inside is like a warehouse: rough walls, cleverly-stylish rustic furniture and well-spaced tables.
I was immediately drawn by the kitchen, which is spacious and which opens out onto the dining room. Here, it’s the food that matters and I find that pleasing. There’s not a great deal of choice, but the menu changes daily, so you can be sure of fresh and seasonal dishes.
Its speciality, however, is the vegetable board which you can choose from to accompany any of the dishes. Dutch people often have a tendency to talk about the side dish as a way of telling you about what they ate the day before. With Proef, they’ve certainly got something to tell people about. The board contains a wide variety of tastes and colours, unusual combinations and vegetables, all of which are mouth-watering. The rest is quite simply delectable.
It’s clear that the produce is not something they get from the mini-market up the road. Sometimes, the staff there explain the origins of their produce as if they know the actual person who supplied it. Much of it is organic, but I don’t advise you to go for the organic wine*. Why not try their fruit juices as an aperitif? It’s delicious to enjoy before the main event, and some people come here for that reason alone, just to enjoy a drink. Which is a good reason to come back.
Opening hours: from 4 pm but the kitchen opens at 6pm. Proef has announced that it will be opening for lunch starting in the spring.
